Grilled Italian Veggies in a foil packet| Vegetable/Fruit Day
Makes 3 serving - uses 12 oz of your daily vegetable allowance
Ingredients
yellow squash
1 zucchini
1 med onion
8 whole mushrooms
1 Roma tomato
3 cloves garlic, minced
3 Tbsp. lemon juice
1/2 tsp salt
1 tsp Good Seasons Italian or Garlic and Herb salad dressing powder
Directions
combine the garlic, lemon juice, salt and Good Seasons
add just enough water to liquefy
mix well (you should have about 3 tablespoons of dressing)
place portioned veggies onto a large piece of foil, drizzle with the dressing then bring up the long sides, folding over twice, then the short sides, folding over twice
place on a preheated grill (if gas, med-hi) and cook for 10-12 minutes
carefully slide cooked packets onto cookie sheet
use a knife to pierce the foil to allow steam to escape
