Stacey's Cauliflower "fried" rice | Vegetable/Fruit Day
Makes 2 servings - each serving uses 8 oz of your daily vegetable allowance
Ingredients
- 1 cup cauliflower rice Recipe
- may be bought chopped already fresh or frozen
- 1/2 onion, diced
- 1/4 cup carrots, diced
- 1/2 pepper, diced
- 1/4 cup mushrooms, sliced
- 1 scallion, diced
- Braggs Liquid Aminos
- PAM or other zero calorie cooking spray
- Himalayan pink salt
Directions
- heat a pan with PAM
- sauté onions until soft and slightly browned
- add carrots, peppers, mushrooms and sauté until soft and slightly browned
- add a pinch of Himalayan pink salt
- remove veggies from the pan and set aside
- respray pan with PAM and sauté cauliflower rice until it starts to get coated with the PAM
- when cauliflower turns a bit brown add 1-2 sprays of Braggs Liquid Aminos
- sauté another two minutes
- plate the cauliflower rice and add veggies on top
- enjoy!
