Marlene's Cauliflower Steaks |  Vegetable/Fruit Day

Makes 4 serving - uses 10 oz of your daily vegetable allowance

Ingredients
  • 1 head of cauliflower
  • Spice of choice
    • Marlene likes lemon curry or tarragon sea salt
  • PAM or other zero calorie cooking spray
Directions
  • Preheat oven to 500
  • Carefully slice cauliflower head into 4 thick slabs
  • Carefully place 'steaks' on cooking tray
  • Spray 'steaks' with PAM
  • Sprinkle with spice of choice
  • Roast 'steaks' in oven
  • When top is browned carefully flip with spatula
  • Roast for another 10 minutes
  • Marlene suggests serving with roasted mixed vegetables or a side of legal guacamole and plantain chips
  • Enjoy!
