Colleen's Zucchini Pasta | Vegetable/Fruit Day
Makes 2 servings - each serving uses 14 oz of your daily vegetable allowance
Ingredients
- 3 zucchini
- 1 sweet onion, diced
- 14 oz can diced tomato
- 3 cloves garlic, crushed
- salt
- pepper
- basil
- Italian seasoning
- 1 packet stevia
Directions
- spiralize the zucchini and set it aside
- Colleen used the Westmark spiromat which may be purchased on Amazon
- in a saucepan, sauté the onion and garlic
- add the can of tomatoes (undrained) and let simmer for a few minutes
- while the sauce is simmering add salt, pepper, basil and Italian seasonings, to taste
- add packet of stevia to sauce
- after approximately 10 minutes, add the zucchini noodles to the sauce
- allow the noodles to cook in the sauce to the tenderness of your liking
- keep in mind, the longer the zucchini noodles cook, the more they will water down the sauce
- enjoy!
