Michelle's Chocolate Pudding | Milk/Yogurt Day
Makes 2 servings - uses 2 oz of your daily milk allowance
Ingredients
- 2 TBSP unsweetened cocoa, sifted
- 1/8 tsp salt
- 1 tsp xanthan gum
- 4 oz whole milk
- 4 oz water
- 1/4 cup Splenda or other zero calorie sweetener
- 1/2 tsp vanilla
Directions
- in a medium microwaveable bowl, whisk together cocoa, salt, xanthan gum and Splenda
- in a separate bowl, combine milk and water
- gradually mix about half the liquid into the dry mixture, whisking until completely moistened
- gradually whisk in the remaining liquid
- microwave on high for 3 minutes, whisking briskly every 30 seconds until thickened
- watch closely so it does not boil over
- whisk in the vanilla
- pour into 2 small dessert dishes
- chill well
- enjoy!
