Spinach Stir Fry | Vegetable/Fruit Day
Makes 4 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 16 oz baby spinach
- 10 oz mushrooms, sliced
- 1 medium red pepper, diced
- 1/2 red onion, chopped
- Bragg's liquid aminos
- garlic salt
- salt
- pepper
Directions
- heat saucepan on medium heat
- when pan is hot, spray pan with a thin layer of Bragg's liquid aminos
- sauté spinach
- as spinach begins to wilt, spray with Bragg's to keep moist, mixing well
- add mushrooms, peppers, onions, stirring frequently
- add garlic salt, salt, pepper (to taste)
- cook until mushrooms and peppers are tender
- enjoy!
