Mashed Plantains (Gilda)

Ingredients
1 green plantain (cut in 3 or 4 pieces, skin on)
1 medium onion, diced
1 clove garlic, minced
salt and black pepper
Directions
boil plantain for about 45 minutes or until soft
while cooking sauté an onion in pan sprayed lightly with Pam
you can add water or veggie broth to keep the onions caramelizing
add the garlic and cook another minute or so
when plantains are done, remove from water, slit peel and remove
mash the plantains, add the sautéed onions, salt and pepper to taste
