Green Beans With Roasted Red Bell Peppers
| Vegetable/Fruit Day
Makes 3-4 servings
Ingredients
1/2 lb. green beans, ends removed, steam or cook for 5 minutes in boiling water
spritz of PAM
1 teaspoon garlic, minced
1/3 cup roasted red peppers (canned) diced
salt and freshly ground pepper to taste
Directions
heat the oil in a skillet
add the beans and cook until just soft
add the garlic and peppers
spray Pam in skillet
add cooked beans
add the garlic and peppers
cook for 2 minutes longer (add a little water or veggie broth if necessary)
taste test for seasonings
serve warm
