Annemarie's Caponatta | Vegetable/Fruit Day
Vegetable & Fruit Day Makes 4 servings - uses 12 oz of your daily vegetable allowance
Ingredients
- 1 medium eggplant
- 2 red bell peppers
- 8 oz mushrooms
- garlic, to taste
- oregano, to taste
- bay leaves, to taste
- salt, to taste
- lemon juice, to taste
- PAM or other zero-calorie cooking spray
Directions
- slice eggplant and bell peppers in strips
- slice mushrooms
- mix all ingredients
- place in a microwavable dish sprayed with a little bit of PAM
- microwave for approximately 30 minutes, stirring every 10 minutes, until eggplant is cooked
- eat warm or cold; make a wrap with lettuce
- enjoy!
