Beets With Orange And Mint
| Vegetable/Fruit Day
Ingredients
5 medium beets (about 1-1/2 pounds)
⅛ - ¼ cup water
1t. orange extract
1 packet sweetener (the amount of sweetener depends on how sweet the beets are - so watch this)
1/2t. salt
1 teaspoon orange zest
1 teaspoon fresh mint (optional)
Directions
put the beets with enough water to cover the bottom of the dish to a depth of ½ inch, in a covered casserole
bake at 375 degrees for 1 hour
check to see if they are soft by piercing with the tip of a sharp knife or cooking fork - if not, give them another 10 - 15 minutes
slip the skins off, and slice or dice the beets
toss with the orange extract mixture
then the orange zest and mint
cool and serve
