Red Pepper Coulis
| Vegetable/Fruit Day
Ingredients
⅛ cup chopped red hot chili peppers or cherry pepper (less to taste)
½ teaspoon minced garlic
2 Tablespoons shallots, finely chopped
¼ cup vegetable broth
¼ teaspoon table salt (or to taste)
¼ teaspoon black pepper (or to taste)
Directions
in a small saucepan, combine red pepper, chili pepper or cherry pepper, garlic, shallots and broth
bring to a boil over medium-high heat and cook until peppers are tender, about 2 to 4 minutes
process mixture in a blender until smooth
stir in salt, pepper and mint
pour into a small serving bowl and chill before serving
