Ingredients
1 head of cauliflower, grated
2 tomatoes, diced small
2-3 scallions, chopped, including green parts (regular onion, diced small can be substituted)
1/2 cucumber, chopped into small pieces
flat leaf parsley, small handful, medium chopped
real lemon to taste
salt and pepper to taste
