Jill's Salad With Kelp Noodles | Vegetable/Fruit Day
Makes 2 servings - uses 14 oz of your daily vegetable allowance
Ingredients
- 1 small sweet onion, chopped
- 1 shallot, chopped
- 8 oz baby bellas, sliced thin
- 4 oz red pepper, sliced
- 4 oz cucumber, sliced
- 4 oz tomatoes, diced
- ½ package kelp noodles
- 2 cups lettuce, chopped
- salt
- pepper
- Braggs Liquid Aminos
- PAM Olive Oil or other zero-calorie cooking spray
Directions
- sauté chopped onion and shallot in PAM until caramelized
- add baby bellas to sauté, cooking for 5 minutes
- in a separate pot, boil kelp noodles for 10 minutes
- drain noodles
- spray with Braggs Liquid Aminos, to taste
- in a large bowl, combine lettuce, red pepper, cucumber and tomatoes
- pour sautéed vegetables on top of salad
- add salt and pepper, to taste
- put kelp noodles on top of salad
- toss salad
- enjoy!
