Merle's Mushroom Soup |  Vegetable/Fruit Day

Makes 2 servings - uses 6 oz of your daily vegetable allowance

Ingredients
  • 16 oz mushroom broth
    • you may substitute vegetable broth for a “milder” taste
  • 8 oz sliced baby bella and/or white mushrooms
  • ½ tsp adobo seasoning
  • 1 TBSP chopped fresh chives or other fresh herb for garnish
Directions
  • heat broth on medium/high
  • when hot, add mushrooms and seasoning
    • note: adjust amount of broth, mushrooms and seasoning to personal taste
  • stir occasionally for approximately 3 minutes until mushrooms are soft
  • garnish with chives
  • enjoy!
