Merle's Mushroom Soup | Vegetable/Fruit Day
Makes 2 servings - uses 6 oz of your daily vegetable allowance
Ingredients
- 16 oz mushroom broth
- you may substitute vegetable broth for a “milder” taste
- 8 oz sliced baby bella and/or white mushrooms
- ½ tsp adobo seasoning
- 1 TBSP chopped fresh chives or other fresh herb for garnish
Directions
- heat broth on medium/high
- when hot, add mushrooms and seasoning
- note: adjust amount of broth, mushrooms and seasoning to personal taste
- stir occasionally for approximately 3 minutes until mushrooms are soft
- garnish with chives
- enjoy!
