Garlic and Leek Soup | Vegetable Day
Findings suggest that high consumption of certain Allium vegetables, in particular garlic and leek, may reduce the risk of breast cancer. With the onset of autumn, what a great time to keep healthy and warm with this Garlic and Leek Soup.
Ingredients
1 Tbsp olive oil
6 garlic gloves, diced
1 onion, chopped
1 whole leek, discard root end, and slice the rest
1 zucchini, roughly chopped
1 tsp thyme, dried or fresh
4 cups vegetable stock
Salt and pepper, to taste.
Directions
Heat oil in a saucepan on medium heat.
Add onion, and garlic.
Stir gently till onions are soft and translucent.
Add thyme.
Add chopped leeks and zucchini. Continue sauteing.
Once the vegetables look slightly caramelized, add vegetable stock.
Using a stick blender, blend till smooth.
Add salt and pepper to taste.
Serve hot with a garnish of choice, such as chives, parsley, etc.
