Lahmagine | Vegetable Day
Makes 2 servings, each serving 4 oz of your daily vegetable allowance
Ingredients
- 8 oz mushrooms
- 1 TBSP tomato paste
- 1 tsp lemon juice
- 1/4 tsp allspice
- 1/4 tsp cinnamon
- 1/4 tsp onion powder
- 1 TBSP Walden Farms apricot jam
- 1/4 cup singoda flour
- 1/4 tsp salt
- PAM or other zero-calorie cooking spray
Directions
To prepare dough:
- mix Singoda and salt with water till the consistency is very liquid (a drop thicker than milk)
- heat frying pan and spray with PAM
- using a 1/4 cup measuring cup, drop batter onto pan creating 2” circles
- cook over medium heat until golden and bubbly
- flip and continue cooking until done
- let cool on a plate
To prepare topping
- pulse mushrooms in food processor until resembles ground beef
- heat frying pan and spray with PAM
- add mushrooms until just cooked through and liquid has evaporated
- mix with rest of topping ingredients
- spread a teaspoon full onto each dough round.
