Israeli Salad | Vegetable Day
makes 2 servings - each serving uses 6 oz of your daily vegetable allowance
Ingredients
- 3 mini cucumbers
- 1 large tomato
- 1/4 red onion
- parsley, to taste
- 1 TBSP lemon juice
- salt, to taste
- pepper, to taste
Directions
- dice the cucumbers
- optional to peel them first
- remove the seeds from the tomato
- dice the tomato
- finely chop the onion
- finely chop the parsley
- combine vegetables in a bowl
- add lemon juice, salt and pepper
- combine well
- enjoy!
