Colleen's Zucchini Pasta |  Vegetable Day

Makes 2 servings - each serving uses 14 oz of your daily vegetable allowance

Ingredients
  • 3 zucchini
  • 1 sweet onion, diced
  • 14 oz can diced tomato
  • 3 cloves garlic, crushed
  • salt
  • pepper
  • basil
  • Italian seasoning
  • 1 packet stevia
Directions
  • spiralize the zucchini and set it aside
    • Colleen used the Westmark spiromat which may be purchased on Amazon
  • in a saucepan, sauté the onion and garlic
  • add the can of tomatoes (undrained) and let simmer for a few minutes
  • while the sauce is simmering add salt, pepper, basil and Italian seasonings, to taste
  • add packet of stevia to sauce
  • after approximately 10 minutes, add the zucchini noodles to the sauce
  • allow the noodles to cook in the sauce to the tenderness of your liking
    • keep in mind, the longer the zucchini noodles cook, the more they will water down the sauce
  • enjoy!
