Jill's Carrots and Cabbage | Vegetable Day
Makes 4 servings - each serving uses 12 oz of your daily vegetable allowance
Ingredients
- 1 lb carrots, chopped
- 1 head of cabbage (white or green), sliced
- 1 onion, chopped
- 1 shallot, chopped
- salt
- pepper
- PAM Olive Oil or other zero-calorie cooking spray
Directions
- spray a sauté pan with PAM
- put chopped onions and shallots and sauté for 5 minutes
- add carrots to sauté until they soften, stirring frequently
- add cabbage to sauté until it all softens
- season with salt and pepper to taste
- note, this tastes even better the next day
- enjoy!!
