note, it is easier to work with a straight, rather than curved, cucumber
1 avocado
small bunch of basil leaves
1 clove garlic
2 tsp lime juice
ΒΌ tsp salt
fresh ground pepper, to taste

This recipe uses a homemade filling, but you can substitute for pre-made, vinegar-free guacamole! Our favorites are Sabra or Costco's Kirkland brand guacamole.
Directions
combine avocado, basil, garlic, lime juice, salt and pepper in a food processor or blender until smooth and creamy
if you are combining by hand, finely mince the basil leaves and garlic before combining with the other ingredients and mix with a fork until smooth and creamy
set mixture aside
cut off the ends of the cucumber
using a mandolin or vegetable peeler, cut cucumber lengthwise into thin strips
spread a thin layer of the avocado mixture on a cucumber slice
make sure to spread the avocado mixture to the ends of the cucumber so the ends of the rolls will stick together
