Stir-Fry Bok Choy | Vegetable Day
You should have about 4 servings of about 1/2 cup each.
Ingredients
- 4 bunches baby bok choy (basically, 1 bunch per person)
- 2 slices ginger (grated, about 2 tablespoons)
- 2 cloves garlic minced
- 1 packet of Truvia/Stevia
- 1/4 teaspoon sea salt
- 2 tablespoons Braggs liquid
- Pam Olive Oil spray
- 1/4 cup water
Directions
- wash the baby bok and drain on paper towels
- separate the stalks and leaves
- cut the leaves horizontally and stalks in a vertical 3" pieces
- spray the Olive Oil spray in pan and get hot over medium/high heat
- add your ginger and garlic briefly for about 30 seconds until the ginger is aromatic
- add the bok choy stalks first then the leaves
- stir around to mix and blend (about 2 minutes); then stir in the Braggs, Stevia and salt on a high heat for about 1 minute
- add the 1/4 cup of water and simmer (low heat), cover the wok or large pan and simmer about 2 mins
