Legal Latkes (“Sweet Potato” Pancakes) | Vegetable Day
On their own or with some apple sauce, these latkes are the perfect Hanukkah treat. Enjoy them as part of the holiday season and throughout the year! This recipe brought to you by member Acc(u)Mitch.
Makes 4 servings. 8 oz of daily vegetable allowance.
Ingredients
1 spaghetti squash
1 onion
Salt
Pepper
Butter Flavor PAM or other brand zero-calorie cooking spray
Olive oil PAM or other brand zero-calorie cooking spray
Optional, store bought unsweetened apple sauce or homemade with zero-calorie sweetener

Directions
Cut off one end of the spaghetti squash.
Poke holes in it with a fork, as if baking a potato.
Cook in the microwave on high for 10 - 20 minutes depending on the size of the squash. Note, you may bake it in the oven for 40 - 60 minutes.
Cut the cooked squash in half lengthwise and let cool.
When cool, scoop out all the seeds and excess “gushy bits”.
Rake with a fork to remove the squash.
Press dry using dish towel or paper towel to remove as much water as possible. Note, this is the key to the squash being able to form a “pancake”.
Finely grate onion and drain.
Combine squash and onion in a bowl.
Add salt and pepper, to taste.
Spray frying pan with olive oil cooking spray and heat on medium low. Do not begin cooking until pan is hot.
Using your hands, make silver-dollar pancake sized pancakes with the mixture.
Lightly spray both sides of pancakes with butter flavored cooking spray.
Place in pan and cook both sides until lightly brown.
Optional, serve with apple sauce.
