Mary's Tropical Delight | Vegetable Day
Makes 2 servings - uses 12 oz of your daily vegetable allowance and 1 serving of fruit
Ingredients
- 1 small red onion, chopped
- 1/2 red bell pepper, sliced
- 5 oz cabbage, sliced
- 1 zucchini, sliced
- 1 small banana, sliced
- 1/4 cup shredded coconut
- 1 package Miracle Rice
- may use Miracle Noodles cut into small pieces
- 2 TBSP yellow Indian curry powder
- 1 tsp garlic salt
- 1/2 cup water
- salt, to taste
- pepper, to taste
- 1 cup pineapple and mango, diced
- PAM or other zero calorie cooking spray
Directions
- spray skillet with PAM
- "fry" onion, bell pepper and cabbage until slightly soft
- stir in curry and garlic salt and fry for 2 more minutes
- stir in rest of ingredients, except pineapple and mango
- simmer uncovered until zucchini becomes slightly soft (approximately 5 minutes)
- add more water, as needed
- scatter with pineapple and mango before serving
- enjoy!!
