Caramelized Onions And Bell Peppers |  Vegetable Day

Makes 2 servings - uses 6 oz of your daily vegetable

Ingredients
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 small yellow onion
  • PAM olive oil or other zero calorie cooking spray
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • ½ tsp lemon juice
  • ½ tsp fresh thyme, finely chopped (or ¼ tsp dried thyme)
Directions
  • remove stems and seeds from peppers and cut into ¼ inch strips
  • peel onion and slice into ¼ inch strips
  • spray large skillet with PAM and heat on medium-high heat
  • add onions, peppers and half of the salt and pepper
  • cook, stirring every few minutes until onions are caramelized and peppers are tender and slightly browned, approximately 15-20 minutes
  • add lemon juice and thyme
  • turn heat to low and cook for a few more minutes
  • add remaining salt and pepper, to taste
  • serve hot or room temperature
