Grilled Pineapple | Vegetable Day
Makes 5 servings - uses 1 cup of your daily fruit allowance
Ingredients
- 1 medium pineapple
- PAM or other zero-calorie cooking spray
- ¼ tsp cayenne pepper
- sea salt
Directions
- heat grill
- spray grill with PAM
- prepare pineapple by removing top and skin
- slice into rounds approximately ¾” thick and remove core
- in a small bowl, spray some PAM and mix with cayenne pepper and salt
- brush pineapple slices with mixture
- place on grill
- cover and cook 4 - 5 minutes until slightly charred
- uncover and turn pineapple slices over
- cover and cook another 4 - 5 minutes until charred and tender
- remove from grill and enjoy!
