Green Beans With Roasted Red Bell Peppers | Vegetable Day
Makes 3-4 servings
Ingredients
- 1/2 lb. green beans, ends removed, steam or cook for 5 minutes in boiling water
- spritz of PAM
- 1 teaspoon garlic, minced
- 1/3 cup roasted red peppers (canned) diced
- salt and freshly ground pepper to taste
Directions
- heat the oil in a skillet
- add the beans and cook until just soft
- add the garlic and peppers
- spray Pam in skillet
- add cooked beans
- add the garlic and peppers
- cook for 2 minutes longer (add a little water or veggie broth if necessary)
- taste test for seasonings
- serve warm
