Faux Sweet Potato Pancakes | Vegetable Day
Makes 4 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 1 acorn squash or small butternut squash
- PAM or other zero-calorie cooking spray
- optional:
- cinnamon
- Walden Farms marshmallow dip
- Walden Farms pancake syrup
Directions
- preheat oven to 350⁰
- cut squash in half lengthwise
- bake, cut side down, until tender
- scoop out pulp and mash in bowl
- put pulp in a gallon-sized Ziploc bag
- roll into “log” form
- refrigerate for 24 - 48 hours
- when ready to prepare, lightly spray sauté pan with PAM
- cut log into 2.5” portions
- note: you may make one portion at a time and leave the remainder in the refrigerator for future use
- flatten each portion into pancake shape
- sauté “pancake” in pan until each side is slightly brown
- optional - top with cinnamon, Walden Farms marshmallow dip or Walden Farms pancake syrup
