Creole Green Beans | Vegetable Day
The full flavors of Louisiana cooking complement green beans
Ingredients
- 1 green pepper
- two teaspoons of water or vegetable broth
- 1 medium onion, diced
- 1/2 teaspoon garlic, minced
- 2 cups crushed tomatoes (canned)
- hot sauce, to taste
- 1 1/2 lbs. green beans
Directions
- combine onions and green pepper with 2 teaspoons of water or vegetable broth in a saucepan
- cook until just soft
- add garlic and cook for 1 minute longer
- add tomatoes and hot sauce and simmer for 30 minutes over low heat
- snap the ends off the beans and cook in boiling water until soft
- drain and toss them in the sauce and serve warm
