Beets With Orange And Mint | Vegetable Day
Ingredients
- 5 medium beets (about 1-1/2 pounds)
- ⅛ - ¼ cup water
- 1t. orange extract
- 1 packet sweetener (the amount of sweetener depends on how sweet the beets are - so watch this)
- 1/2t. salt
- 1 teaspoon orange zest
- 1 teaspoon fresh mint (optional)
Directions
- put the beets with enough water to cover the bottom of the dish to a depth of ½ inch, in a covered casserole
- bake at 375 degrees for 1 hour
- check to see if they are soft by piercing with the tip of a sharp knife or cooking fork - if not, give them another 10 - 15 minutes
- slip the skins off, and slice or dice the beets
- toss with the orange extract mixture
- then the orange zest and mint
- cool and serve
