Red Pepper Coulis | Vegetable Day
Ingredients
- ⅛ cup chopped red hot chili peppers or cherry pepper (less to taste)
- ½ teaspoon minced garlic
- 2 Tablespoons shallots, finely chopped
- ¼ cup vegetable broth
- ¼ teaspoon table salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
Directions
- in a small saucepan, combine red pepper, chili pepper or cherry pepper, garlic, shallots and broth
- bring to a boil over medium-high heat and cook until peppers are tender, about 2 to 4 minutes
- process mixture in a blender until smooth
- stir in salt, pepper and mint
- pour into a small serving bowl and chill before serving
