Ingredients
- 1 head of cauliflower, grated
- 2 tomatoes, diced small
- 2-3 scallions, chopped, including green parts (regular onion, diced small can be substituted)
- 1/2 cucumber, chopped into small pieces
- flat leaf parsley, small handful, medium chopped
- real lemon to taste
- salt and pepper to taste
