Cauliflower Tabouli |  Vegetable Day

Ingredients
  • 1 head of cauliflower, grated
  • 2 tomatoes, diced small
  • 2-3 scallions, chopped, including green parts (regular onion, diced small can be substituted)
  • 1/2 cucumber, chopped into small pieces
  • flat leaf parsley, small handful, medium chopped
  • real lemon to taste
  • salt and pepper to taste
