Bess' Avocado Tart | Vegetable Day
Makes 1 serving - uses 8 oz of your daily vegetable allowance
Ingredients
- 1 avocado, diced
- 1 tsp lemon juice
- 1 zucchini
- 1 yellow squash
- 1 pinch salt
- 1 pinch pepper
- ¼ red onion, chopped
- 1 pinch cilantro, diced finely
Directions
- mix avocado, onion, lemon juice, cilantro
- add salt and pepper, to taste
- set mixture aside
- shred zucchini and squash in large sections
- line a cooking ring or round cookie cutter with sections of zucchini and squash
- place avocado mixture in the center
- lift ring
- enjoy!
