Chocolate Pudding | Vegetable Day
Makes 1 serving- uses 4 oz of your daily vegetable allowance
Ingredients
- 1 small avocado, halved and pitted
- 4 tsp unsweetened cocoa (we used Ghirardelli)
- note, MAXIMUM use of unsweetened cocoa 2 TBSP per day
- 4 packets Truvia or other zero-calorie sweetener
- ½ tsp pure vanilla extract
- 1 raspberry (for garnish)
Directions
- scoop flesh of avocado into a food processor or blender
- mix avocado until smooth
- add cocoa, Truvia and vanilla extract
- mix well
- for best flavor, prepare right before serving
- garnish with a raspberry
- enjoy!
