Creamy Avocado Dressing | Vegetable Day
Makes 6-8 servings - uses 1 oz of your vegetable allowance
Ingredients
- 1 small or 1/2 large avocado
- 1/2 cucumber
- 1/4 cup lemon juice
- 1/4 cup water
- 1 clove garlic
- 1/4 teaspoon salt
- 1/2 cup chopped cilantro
Directions
- cut avocado in half, then remove skin and pit
- save the pit for later
- place all ingredients in food processor or blender
- note: to make a dip rather than dressing, use 1/8 cup each lemon juice and water
- mix until smooth
- enjoy over your salad or crudite!
Note: this dressing will keep for several days in the refrigerator. Before storing, place pit in the dressing to help prevent it from turning brown.
