Mexican Salad (Carolyn) | Vegetable Day
Makes 2 servings
Ingredients
- 1 zucchini cubed
- 1 yellow squash cubed
- 1 onion peeled and sliced
- 1 package of Portobello mushrooms ( Carolyn chose the bigger ones but you can use anything)
- PAM
- 1 - avocado
- juice from one lime
- 1 - jalapeno seeded
- 1 - tomato cut in bits
Directions
- spray pan with PAM and cook until tender or to the consistency you like
- add 1 package of Mexican seasoning
- stir, add water & let cook
- while that is cooking mash in a bowl: avocado, juice from one lime, jalapeno, tomato
- line a bowl with lettuce
- put on top of lettuce
- when veggies are done - top salad with them and ENJOY!!
