Cucumber Salad (Gilda) | Vegetable Day
Ingredients
- 1 - 2 cucumbers, peeled and thinly sliced on mandolin or food processor
- 2-3 scallions, chopped
- ¼ c. lemon juice
- 2 packets Splenda (or more to taste)
- ½ tsp. salt
Directions
- combine: ¼ c. lemon juice, 2 packets Splenda (or more to taste),½ tsp. salt
- pour over cucumbers and scallions and marinate for several hours before serving
