Kale And Cauliflower Soup | Vegetable Day
Makes 4 servings - uses 8 oz of your daily vegetable allowance
Ingredients
- 32 oz Pacific vegetable broth or other brand of “legal” vegetable broth
- 1 small head cauliflower
- 1 bunch red kale
- 4 cloves garlic
- pinch of Himalayan salt (pink salt)
Directions
- put all ingredients in a pot and simmer until cauliflower is soft
- remove from heat
- put in blender and puree until it has the texture of pea soup
- note, if you are using a personal blender, you should measure out single servings and blend one at a time
- enjoy!
