Michelle's Chocolate Pudding |  Milk Day

Makes 2 servings - uses 2 oz of your daily milk allowance

Ingredients
  • 2 TBSP unsweetened cocoa, sifted
  • 1/8 tsp salt
  • 1 tsp xanthan gum
  • 4 oz whole milk
  • 4 oz water
  • 1/4 cup Splenda or other zero calorie sweetener
  • 1/2 tsp vanilla
Directions
  • in a medium microwaveable bowl, whisk together cocoa, salt, xanthan gum and Splenda
  • in a separate bowl, combine milk and water
  • gradually mix about half the liquid into the dry mixture, whisking until completely moistened
  • gradually whisk in the remaining liquid
  • microwave on high for 3 minutes, whisking briskly every 30 seconds until thickened
    • watch closely so it does not boil over
  • whisk in the vanilla
  • pour into 2 small dessert dishes
  • chill well
  • enjoy!
