Janet's Plantain Toast |  Vegetable Day

Makes 1 serving - uses 1 cup of your daily fruit allowance and 3 oz of your daily vegetable allowance

Ingredients
  • 1 plantain, preferably green but just starting to turn yellow
  • 1 large garlic clove, peeled
  • ½ ripe avocado
  • seasoning, to taste
    • Janet likes McCormick Garlic Sea Salt grinder
  • PAM olive oil or other zero-calorie cooking spray
Directions
  • preheat oven to 425˚
  • cut raw plantain crosswise into 3 - 4 pieces
  • slit each chunk lengthwise 3 - 4 times to just below the skin
    • the skin will peel off pretty easily this way
  • put raw chunks of plantain in food processor with garlic clove and run with chopping blade until mixture is smooth
  • add avocado and seasoning and run food processor for a few more seconds until well blended
  • spray baking pan with PAM
  • shape “dough” into a rectangle or square
  • bake 10-12 minutes on each side
  • use toast warm with warm toppings such as grilled vegetables or allow to cool for cold toppings such as bruschetta
    • Janet also uses this for a veggie pizza crust
