Veggie Pizza (Susan M) |  Vegetable Day

8 1/2 oz. towards Veggie Allowance & Plantain = 1 Fruit Allowance

Ingredients
  • 1 yellow plantain, boiled for 45 minutes, then cooled
  • 1/2 t onion powder
  • 1/2 t garlic powder
  • 1/2 t parsley
  • 1/4 t kosher salt
  • 2 oz. chopped onions
  • 1 1/2 oz. diced red pepper
  • 1 1/2 oz. diced green pepper
  • 1 1/2 oz. diced zucchini
  • 2 oz. MUIR GLENN ORGANIC TOMATO SAUCE
  • 1 green plantain
  • 1/2 t onion powder
  • 1/2 t garlic powder
  • 1/2 t parsley
  • 1/4 t kosher salt
Directions
  • put plantain, garlic powder, onion powder, parsley and salt in food processor
  • pulse until it's all mashed and all ingredients are combined
  • preheat oven to 425 and spray pizza stone with Pam
  • roll plantain mixture into a ball, then carefully [stone is hot] flatten in to pizza crust onto hot stone
  • cook 20 minutes BUT WATCH CAREFULLY SO IT DOESN'T BURN
  • after 20 minutes flip crust and cook for 10 minutes
  • while it's cooking in a fry pan sprayed with Pam, sauté onions, red peppers, green peppers and zucchini
  • top crust with 2 oz. MUIR GLENN ORGANIC TOMATO SAUCE
  • then add veggies
  • cook for 10 minutes and serve
