Eva's Plantain Toast |  Vegetable Day

Makes 1 servings - uses 1 cup of your daily fruit allowance

Ingredients
  • 1 plantain (yellow is best)
  • ¼ tsp salt
  • PAM or other zero-calorie cooking spray
  • cinnamon (optional)
  • zero-calorie sweetener (optional)
  • your choice of topping (see examples below)
Directions
  • cut the plantain into chunks
  • boil until soft
  • let cool
  • peel
  • put plantain chunks and salt in food processor and mix until well blended
    • for cinnamon toast, add cinnamon and zero-calorie sweetener (to taste)
  • preheat oven to 425⁰
  • spray a cookie sheet with PAM
  • make 3 - 4 toast sized squares from mixture and place on cookie sheet
    • cookie cutters make it easier to give the mixture shape; use fun shapes too!
  • bake for 10 - 15 minutes on each side
    • timing varies so keep an eye on it so it doesn't burn
  • some topping ideas
    • Walden Farms spreads
    • tomato sauce and avocado slices
    • grilled vegetables
    • cinnamon toast with unsweetened applesauce
