Creole Green Beans |  Vegetable Day

The full flavors of Louisiana cooking complement green beans

Ingredients
  • 1 green pepper
  • two teaspoons of water or vegetable broth
  • 1 medium onion, diced
  • 1/2 teaspoon garlic, minced
  • 2 cups crushed tomatoes (canned)
  • hot sauce, to taste
  • 1 1/2 lbs. green beans
Directions
  • combine onions and green pepper with 2 teaspoons of water or vegetable broth in a saucepan
  • cook until just soft
  • add garlic and cook for 1 minute longer
  • add tomatoes and hot sauce and simmer for 30 minutes over low heat
  • snap the ends off the beans and cook in boiling water until soft
  • drain and toss them in the sauce and serve warm
