Halloween Veggie Skeleton Crudité And Dip |  Vegetable Day

Makes 1 servings - uses 10 oz of your daily vegetable allowance

Ingredients
  • lettuce leaves
  • 1 small cucumber, sliced
  • 1 red pepper, sliced
  • 6 baby carrots
  • 4 celery sticks
  • 4 mushrooms, sliced
  • 2 cherry or grape tomatoes
  • 2 broccoli florets
  • 2 sugar snap peas
  • Walden Farms Alfredo sauce
  • Good Seasons Italian dressing packet
  • ¼ tsp xanthan gum
  • 1 olive sliced (to decorate, not to eat)
Directions
  • in a small bowl, combine Walden Farms Alfredo sauce and contents of Good Seasons Italian dressing packet (to taste)
  • add xanthan gum to thicken the dip
    • start with a pinch and gradually add more to thicken to desired consistency
  • the bowl of dip will become the head of the skeleton
  • arrange the veggies on a platter in the shape of a skeleton as in the photo
    • note: the olive slices are only for creating the eyes and are not “legal” for use on the program
