Chocolate Pudding |  Vegetable Day

Makes 1 serving- uses 4 oz of your daily vegetable allowance

Ingredients
  • 1 small avocado, halved and pitted
  • 4 tsp unsweetened cocoa (we used Ghirardelli)
    • note, MAXIMUM use of unsweetened cocoa 2 TBSP per day
  • 4 packets Truvia or other zero-calorie sweetener
  • ½ tsp pure vanilla extract
  • 1 raspberry (for garnish)
Directions
  • scoop flesh of avocado into a food processor or blender
  • mix avocado until smooth
  • add cocoa, Truvia and vanilla extract
  • mix well
  • for best flavor, prepare right before serving
  • garnish with a raspberry
  • enjoy!
