Jill's Salad With Kelp Noodles |  Vegetable Day

Makes 2 servings - uses 14 oz of your daily vegetable allowance

Ingredients
  • 1 small sweet onion, chopped
  • 1 shallot, chopped
  • 8 oz baby bellas, sliced thin
  • 4 oz red pepper, sliced
  • 4 oz cucumber, sliced
  • 4 oz tomatoes, diced
  • ½ package kelp noodles
  • 2 cups lettuce, chopped
  • salt
  • pepper
  • Braggs Liquid Aminos
  • PAM Olive Oil or other zero-calorie cooking spray
Directions
  • sauté chopped onion and shallot in PAM until caramelized
  • add baby bellas to sauté, cooking for 5 minutes
  • in a separate pot, boil kelp noodles for 10 minutes
  • drain noodles
  • spray with Braggs Liquid Aminos, to taste
  • in a large bowl, combine lettuce, red pepper, cucumber and tomatoes
  • pour sautéed vegetables on top of salad
  • add salt and pepper, to taste
  • put kelp noodles on top of salad
  • toss salad
  • enjoy!
