Veggie Fajitas (Sarah)Ingredients Slice all vegetables into strips Portobello Mushrooms Spray sauté pan with PAM--get the pan hot. Add onion, peppers, and mushrooms and sauté (they take the longest to cook). Add zucchini and spices. You'll want to brown the veggies a little for extra flavor. When veggies are tender, take off heat and let sit for a few minutes for all the juices to rest. Put guacamole and salsa in the lettuce cup.
