Veggie Fajitas (Sarah)

Ingredients

Slice all vegetables into strips

Portobello Mushrooms
Zucchini
Red, orange, and yellow peppers
Red onion
(Fresh Jalapeno for an extra "KICK")
Iceberg lettuce (cut in half and tear off whole lettuce cup)
Ground Cumin
Mexican Oregano
Chipotle Powder (this is spicy but adds a great smoked flavor)
Salt
Pepper

Spray sauté pan with PAM--get the pan hot.  Add onion, peppers, and mushrooms and sauté (they take the longest to cook).  Add zucchini and spices. You'll want to brown the veggies a little for extra flavor.  When veggies are tender, take off heat and let sit for a few minutes for all the juices to rest.  Put guacamole and salsa in the lettuce cup.  Add veggies and roll!
