Plantains

Plantain Delight (Adrene)

1 yellow RIPE plantain
Cinnamon
1 teaspoon vanilla extract
Walden Farms pancake syrup
PAM spray

Slice plantain.  Spray frying pan with PAM and let pan get hot.
"Fry" plantain slices until cooked on both sides (crispiness varies to taste)
Mix vanilla with Walden Farms pancake syrup and sprinkle cinnamon on top.
Use sauce for dipping or spread over plantains

Falafel (Susan)

2 yellow, boiled, cooled plantains
4 oz onions
1 clove garlic
1/2 t cumin
1/2 t coriander
1 1/2 t parsley
salt
pepper

Place all the above ingredients in food processor
Make 6-8 balls and press into patties
Spray pan with PAM heat with 4 cloves of garlic
Fry each side until golden brown and serve
 

Mexican Pizza (Pat)

Boil a cut-up plantain in skin till very soft.
Mash up the plantain with 1/2 avocado (this is the crust).
Spray pan with PAM (so it doesn't stick)
Shape into a flat round circle and bake at 325 for 15 to 20 minutes.
Top with minced tomatoes and onions.
Slice and add the rest of the avocado.
Season to taste.
Bake or put under broiler till topping is tender.  Enjoy
 

Mashed Plantains (Gilda)

1 green plantain (cut in 3 or 4 pieces, skin on)
1 medium onion, diced
1 clove garlic, minced
salt and black pepper

Boil plantain for about 45 minutes or until soft'.
While cooking sauté an onion in pan sprayed lightly with Pam.. 
You can add water or veggie broth to keep the onions caramelizing.
Add the garlic and cook another minute or so. 

When plantains are done, remove from water, slit peel and remove.
Mash the plantains, add the sautéed onions, salt and pepper to taste.
 

Plantain Crisps

Cut up a plantain into thin slices and bake them on a pizza crisper (round baking sheet with holes), spray the pan with Pam and cook at 325° for about 45 minutes.  They become crispy.  Put them in a bag sprayed with Pam and add spices and shake them up.  Eat them with guacamole mixed with homemade salsa.
